Observed cooked chicken (fried and baked) in hot holding case. The chicken measured with an internal temperature of approximately 120 degrees F and was prepared 4 hours prior to inspection time. There were heat lamps in the holding unit that were out of service. PIC voluntarily discarded the chicken. Discussed hot holding parameters Corrective Action: Corrected at time of inspection.

RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed containers of chicken strips in warmer display case at 120*F. Hot hold of food to be 135*F or greater. As per the staff in the deli area, chicken strips were prepared at 9:00am. Staff did not log cook time on internal log. When using time as control, staff must document time items are removed from consistent heat to hold at 135*F. Staff discarded product due to in store policy that food be discarded if under 140*F. Correct By: Corrected At Time Of Inspection
