-- In reach-in refrigerator next to ice machine, observed Canadian bacon and folded eggs with temperatures ranging from 51°F-54°F. The ambient temperature of reach-in refrigerator measured at 53.2°F using min/max thermometer. The PIC stated the items were removed from the walk-in refrigerator and placed in reach-in refrigerator approximately 1.5 hours prior to the inspection. All TCS items such as shelled eggs, liquid eggs, Canadian bacon, folded eggs, and butter were relocated to the walk-in refrigerator to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

-- The ambient temperature of the reach-in refrigerator measured at 53.2°F using min/max thermometer. See violation above. All TCS items were removed from the unit and the PIC placed an "out of order" sign on equipment. The PIC stated a work order will be placed to repair to refrigerator. The establishment has sufficient refrigeration space to remain open while awaiting repairs. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

Use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. The person in charge (PIC) stated the items were just used approximately 30 minutes prior to the inspection. At the time of inspection, all patties were placed in the walk-in refrigerator to rapidly cool. Ensure TCS foods maintain a temperature of 41°F or less when cold holding. The cooler was noted in temperature logs to be at 43*F at 2:30 PM. Ambient temperature at 4:15 PM was found to be 45*F with inspector's min/max thermometer. PIC moved the the food items to the walk-in for cooling and continued cold holding. The cooler will be monitored to ensure it is able to maintain an ambient of 41*F or below before it is used to store TCS food items again. Alternate nearby coolers are available to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
