Observed cooked rib meat with internal temperature between 114F - 120F in the hot holding deli case. The person in charge stated the rib meat had been placed into the hot holding deli case less than an hour ago. The person in charge then removed the rib meat and reheated it to minimum of 165F before returning to the hot holding deli case. Discussed maintaining hot holding temperature of 135F or higher.
