Observed cooked meat stuffed pastry with internal temperature of 115F in the hot case by the front counter. The person in charge stated the food item had been taken out of the oven and placed into the hot case less than 1 hour ago. The person in charge stated the hot case was still warming up to temperature and that the temperature settings had not been properly set. The person in charge adjusted the temperature settings and reheated the food items to 165F prior to further hot holding at 135F or higher.
