Inspector's notes

Observed chili/cheese hot dispenser. With inspector probe thermometer the product measured 71*F. The product had been in the machine overnight. The person in charge voluntarily discarded the product at time of inspection. The machine was unplugged. The person in charge plugged in machine and it appeared to be working properly. Discussed with the person in charge that all TCS foods should be maintained at 135*F or higher when hot holding. Corrective Action: Corrected at time of inspection.
