Observed several TCS food items (cheeses, cut tomatoes, salad mix, sausage links) holding in reach-in prep cooler at 47-60*F. Per manager, items had been placed in unit less than 4 hours prior, and were immediately placed into walk-in cooler to cool down. Reach-in cooler temped at 44.6*F with thermometer - manager called for service at time of inspection, and adequate alternate refrigerators are present. In the cabinets under the register counter and soda machine, observed a large quantity of rodent feces, urine, food and food debris, trash, and utensils. In those cabinets, observed staining on the bottom and walls of the cabinets. This is an increase in activity since the last routine inspection and re-inspection. Reviewed pest control reports.
