In the walk in cooler, observed a box of raw, whole eggs stored on the shelf above several containers of ready to eat (RTE) cheeses. Observed a deep, plastic bucket of salsa in the walk in cooler at 51*F. Employee that cooked the salsa stated that it was placed in the cooler to cool yesterday afternoon. No temperatures were taken of the salsa. Salsa was not removed from the cooler since it was placed in there yesterday afternoon. It was determined the salsa never fully cooled below 41*F. Proper cooling requires that the food is cooled from 135*F to 70*F within the first 2 hours and below 41*F within a total of 6 hours. Because the salsa was not below 41*F within 6 hours it was embargoed. Correct By: Corrected At Time Of Inspection

Observed a hot holding pan that was overfilled with cooked rice. Top portion of the rice was holding between 120*F and 130*F. All hot holding food must be kept above 135*F. Rice was made and placed in the pan less than 2 hours ago. The overfilled portion of the rice that was not above 135*F was removed and reheated above 165*F prior to placing back into hot holding.
