Inspector's notes

Observed some organic matter buildup on the inside of some of the soda fountain nozzles. Discussed with person in charge to clean on a more frequent basis to minimize the accumulation of organic matter inside of the nozzles. Person in charge removed the nozzles to be washed, rinsed and sanitized. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed refrigerated beverage case with juice beverages labeled "Perishable; keep refrigerated" in the case. A min-max thermometer was placed into the refrigerated beverage case and allowed to stabilize for 15 minutes. The ambient air temperature inside of the beverage case as measured using a min-max thermometer was 47°F. The internal temperature of the perishable juice as measured using a probe thermometer was holding at 48°F. According to the person in charge, the juice had been inside of the refrigerated case since yesterday. The juice was embargoed at time of inspection (see embargo form). Person in charge reached out to a technician to service the unit. In the meantime, no time and temperature controlled for safety foods will be held in that case until it is repaired. The establishment has sufficient cold holding capacity to maintain safe operations. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed a dairy and juice reach-in cooler with an ambient temperature of 50°F with milk and meat and cheese snack trays inside. A container of milk was measured with an internal probe thermometer and had an internal temperature of 49°F. At time of inspection, PIC embargoed the TCS foods inside of the dairy and juice cooler. PIC no longer has TCS food inside of the dairy and juice cooler until it can be serviced by a technician. The establishment has sufficient refrigeration capacity to continue operations while the dairy and juice reach-in cooler is repaired. Correct By: Corrected At Time Of Inspection
