Corrective Action: Corrected at time of inspection.

Observed cooked chicken wings and chicken tenders at 122-125'F in hot holding unit located in the front of the establishment. Per PIC, the items were prepared one hour prior to inspection. Items were placed under time as a control at time of inspection. PIC will discard at end of 4 hours removed from temperature control. Discussed proper hot holding with the PIC. All food held hot must be maintained at 135'F or above at all times.

Person in charge states these foods have been in the unit since the night before and voluntarily disposed of these foods. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
