Inspector's notes

Observed residue on the bottom of the walls in the produce walk-in cooler and the shared meat/dairy walk-in cooler. As per Person in Charge (PIC), it was an adhesive left behind from having the old sliding/baseboards removed. Recommended PIC to remove residue or replace it with tightly fit and sealed sliding/baseboards. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed live American cockroach crawl out from the wall by the mop sink in the janitor closet at the time of inspection. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection on 2/2.

Inspector's notes

Observed mop sink faucet, equipped with atmospheric vacuum breaker (AVB), to be connected directly to a chemical dispenser by a "side kick" in guest service closet. Also observed y-valve downstream of an AVB at the mop sink at the janitor closet. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Discussed installing a quick-release connection and ensuring hose is disconnected from faucet/chemical dispenser when not in use. Instructed PIC to removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Consecutive repeat: 2nd. Corrective Action: Corrected at time of inspection.

Observed that no paper towels were present at the handwashing sink in the 3 comp sink room. All handwashing sinks must be fully stocked at all times. Observed that no sanitizer was present at the 3 comp sink near the dairy and meat coolers. Sanitizer must be present and used at the correct concentration (50ppm - 100ppm for chlorine) at the 3 comp sink for sanitizing all wares. Core-3-305.11, C: Food Storage-Preventing Contamination from the Premises Observed packages of dry, ready to eat foods, and bottled drinks on the floor around and under the storage shelves throughout the retail dry storage area. Food must be protected from contamination by storing in clean, dry location 6 inches above floor. The PIC talked to the employees about food storage at the time of this inspection. Core-3-307.11, C: Miscellaneous Sources of Contamination Observed several sets of used worked gloves and partially consumed, capped bottled drinks being stored on the food storage shelves with boxes of dry foods. Personal items shall be stored in a designated area separate from food. The PIC had gloves and opened bottles removed. Correct By: Correct Prior To Next Routine Inspection
