Observed mechanical dish machine in use at time of inspection washing/ sanitizing plates. Dish machine was running as a low temperature chlorine sanitizing dish machine. Final rinse sanitizer concentration measured at 0PPM. Acceptable chlorine sanitizer concentration shall measure between 50-100 PPM. PIC made a service call at time of inspection. Establishment will sanitize food contact surfaces in the three compartment sink until the dish machine is serviced and maintains 50-100 PPM. Corrective Action: Corrected at time of inspection.

Observed handwashing sink near the large ice machine and ware washing area missing. According to the PIC the handwash sink is in the process of being replaced. A number of handwashing sinks necessary for their convenient use by employees in areas specified under 161 § 5-204.11, and not fewer than the number of handwashing sinks required by law shall be provided. According to the PIC the handwashing sink will be installed on Monday (5/11/26). Install handwashing sink prior to re-inspection (5/18/2026), proof of correction may be sent to inspector electronically. Corrective Action: Correct prior to re-inspection.

Observed three plastic containers of cooked chicken stacked on top of each other and tightly covered in the walk in refrigerator. Internal temperature of the chicken measured at 56°F. After discussion with the person in charge it was determined the chicken had been cooling since 10 AM.

In the open top portion of the prep refrigerator on the line observed containers of grilled chicken/50°F, portioned cooked chicken/53°F, sliced cheese/ 48°F, au jus/57°F, chicken stock/53°F, and grilled onions/45°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. According to the PIC all TCS foods were re-stocked 2 hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrected at time of inspection.

Observed empty bottle of chlorine sanitizer connected to the dish machine. Chef changed bottle at time of inspection and ran several loads. After several attempts solution measured 0ppm with inspector test strips and establishment test strips. Chef called for service at time of inspection. Chef instructed staff to use 3 compartment sink until the machine is fixed. Discussed with Chef that the dish machine needs to maintain the proper level of sanitizer to ensure complete sanitation of all dishes and utensils. Observed right hand cold table on cooks line with an ambient temperature of 63*F. bottom portion contained premade turkey sandwiches and precooked chicken breasts. Sandwiches measured 59*F with inspector probe thermometer, chicken breasts measured 57*F. Chef stated that the product had only been in the unit for 2 hours. Chef removed product to another cooler at time of inspection to bring back down to proper temperature.
