There were no paper towels or approved hand drying provision at the front counter hand sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing.

Addl Notes: Observed the hand sink in the back room blocked. There were empty cans in the sink basin and stock was stacked in front of the sink. PIC will ensure establishment discontinues use of handwash sinks for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
In the walk in cooler, observed an ambient air temperature of 48*F when measured with a min/max thermometer near the entrance where TCS foods were stored in boxes on shelving. Observed air temp at 42*F in the deepest part of the walk in cooler. Inside the cooler, observed TCS foods holding between 47-52*F including various preparations of tornados (See embargo for details). Per PIC, all foods were received frozen yesterday and had been in the cooler at least since yesterday evening. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC provided temp logs and stated their remote monitoring system had not detected a fault. Observed one thermometer in the beverage cooler non-functional and the other displaying 48*F. No history is available for past readings and parameters are not visible to see when an alarm is triggered. Advised PIC to store TCS foods in other units until the cooler is repaired.
