Lentil item with 1-12 date mark in the reach in cooler next to the cookline area. Salami and pepperoni with no date marks in the reach in cooler. PIC voluntarily discarded the lentils and salami items-see embargo form. PIC stated that the pepperoni was opened two days prior and provided a date mark. Ensure that ready to eat PHF/TCS foods are properly date marked for use within seven days and are disposed of when date mark/expiration date has been surpassed. Chlorine sanitizer in dish machine at 0ppm. **The chlorine sanitizing dispensing line was found to be hanging outside of the machine and dispensing onto the floor. The line mount was found to be missing. PIC called to have the dish machine serviced and stated that all dishes would be washed, rinsed, and sanitized in the three compartment sink until the dish machine is properly repaired. Ensure that sanitizer is at proper concentration according to manufacturer’s directions. Corrective Action: Corrected at time of inspection.
