Observed cut tomatoes, sausage, salsa, cheese, spinach and ham panned from breakfast service past the 4 hour time as control mark inside fridge cooling at 47*f degrees. Per kitchen manager item were supposed to be discarded after service but items were labeled with today's date and returned to fridge by staff. Discussed discarded all items held on time as a control after service. Corrective Action: Corrected at time of inspection.
