Inspector's notes

Observed sausage meat and shredded cheese in sandwich cooler at 45-60F. Observed ambient air temperature in cooler of 45F. Person in charge stated that sausage meat had been in the cooler for 2 hours and was unable to identify how long shredded cheese had been in cooler. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Sausage was moved to walk-in to rapidly cool. Shredded cheese was discarded at time of inspection. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.

Observed 4 flats of unpasteurized, raw, in shell eggs stored above RTE lettuce in the walk in cooler at the time of inspection. Observed a pack of unpasteurized, raw, in shell eggs stored above RTE chocolate chunk single wrapped cookies at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed ricotta cheese, various deli meats, and potato salad at 48*F in front glass deli cooler. Unit observed holding at 48*F at time of inspection. TCS items were moved to the walk in cooler to be held at 41*F at the time of inspection. PIC stated they have been taking temperatures throughout the day and it has been holding at 41*F or below. PIC called maintenance and scheduled them to arrive tomorrow morning 10/08/2024 to repair the cooler. Facility has adequate alternative cold holding units to hold food below 41*F and operate normally. Until the deli cooler is holding at 41*F or below no TCS food is able to be held in it. Corrective Action: Corrected at time of inspection.
