Observed cut tomatoes 63*f, and cut lettuce 47*f degrees on sandwich line. Per PIC items out of temperature less than 4 hours. Items moved to walk-in to cool. Observed walk-in fridge holding hummus, cut tomatoes, mixed yogurt sauce, cut lettuce 45-50*f degrees. Walk-in fridge holding 44*f degrees ambient temperature at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Observed Cut lettuce and Sliced tomatoes at sandwich prep station at 45*F. Observed raw chicken in sandwich prep cooler at 47*F. As per the person in charge lettuce and tomatoes were prepared an hour prior to inspection starting. Raw marinated chicken was embargoed and discarded. Refrigeration was turned down to cool to 41*F Cold Hold items to be 41*F or lower. Observed hummus in walk in cooler at 45*F Observed Tzatziki sauce in walk in cooler at 45*F Cold hold items to be 41*F or lower Walk in cooler was able to be brought town to 41*F. Items were uncovered and stirred to rapidly drop temperatures to 41*F. As per the person in charge the items were made < 3 hours from temperatures being taken. Corrective Action: Corrected at time of inspection.

Observed small sandwich prep cooler across from grill holding at 44*F using max/min thermometer. Owner was able to turn unit down so internal temperature was at 40*F. Observed walk in cooler with an internal ambient temperature of 45*F. Owner was able to lower temperature in unit to 40*F. Cold hold equipment must be working to allow cold food to be 41*F or lower. Corrective Action: Corrected at time of inspection.

Upon Inspection walk-in cooler was founding holding TCS items such as raw chicken, raw beef,and Dolmas at 45*f degrees. Per PIC walk-in cooler had been stocked with fresh product day of. Walk-in cooler was restored down to 39*f degrees by end of inspection. Line items found out of temperature, Lettuce sitting out of cooling element 50*f, yogurt mix, and feta cheese found 45*f degrees. Items sent to walk-in to cool. Corrective Action: Corrected at time of inspection.

Observed hand-held slicer used for cutting off gyro meat being held in 97°F in standing water. Advised PIC the in-use utensil must either be in consistent 135°F water, in continuously replacing water (similar to ice cream scoop setups), or out of water and rinsed and sanitized every 4 hours. Discussed more permanent solutions ideal for business needs. At time of inspection PIC is replacing water whenever temperature gets too low. Corrective Action: Corrected at time of inspection.
