Observed chile relleno and caldo de queso at warmer at 80-85*F. As per the owner, the items were placed on warmer at approximately 11:00 am. Items were cooled back to 41*F. Advised person in charge to monitor foods using a metal stem thermometer. Corrective Action: Corrected at time of inspection.

Re-inspection is scheduled for 01/21/2026. This establishment/operation has demonstrated sufficient compliance to proceed with the permit issuance. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so.

An alternative is to relocate and properly install the ice machine into the kitchen area where a hand sink is already installed and available. Corrective Action: Correct prior to re-inspection.
