Observed ice bucket being filled up while they were on the ground, and the ground was wet. Talked to manager about ice bucket filling up locations. Ensure that containers of ice used to put into ice wells are kept off the ground, and doesn't touch the wet floor, preventing floor water from dripping into ice wells when filling. Observed shredded beef that was reheated and placed into the steam table during the inspection. The beef was holding 128-170F in various areas. Inspector trained staff on reheating temperatures and PIC brought a thermometer to verify. TCS food items must be reheated to 165F prior to hot holding at 135F.
