Observed sliced lettuce and tomato holding 70F in a refrigeration table that was off. PIC discarded the products. Also observed cut lettuce and tomatoes holding 46F in a metal container covered with plastic, in the bottom portion of the display cooler. PIC said the products were cut in the morning. Discussed more efficient cooling methods and to avoid cooling any TCS product in the display coolers, as they are not intended to cool down products quickly. TCS food products must hold 41F or below. Corrective Action: Corrected at time of inspection.

Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Observed rolls of sticker paper backing stored and touching the bottom of the hand sink basin for the front hand sink. Talked to manager about mounting the paper away from the hand sink, and keeping the area clear and accessible for handwashing at all times. Corrective Action: Corrected at time of inspection.
