Inspector's notes

Observed chorizo sausage, turkey sausage, ham, Swiss cheese, cream cheese ; plain, jalapeno, red pepper, veggies, chives, butter in top portion of prep table with an internal temperature of 46-54*F. PIC stated items had been previously changed within 10 minutes prior to inspection and discussed rotation process to limit temperature increase. TCS foods were moved to walk-in cooler to rapidly chill. Reach-in cooler was holding ambient air temperature of 38-41*F in various parts of cooler at time of inspection.
