Observed a container of raw turkey filets above raw fish filets in the walk-in refrigerator. Observed a tray of mechanically tenderized raw beef sirloin above trays of raw fish in the walk-in. Informed PIC that the turkey (poultry) must be stored below fish. Informed PIC mechanically tenderized beef must be stored below fish because it needs to be cooked to a higher cooking temperature. PIC properly stored the animal proteins at time of inspection. Provided PIC with a cooking temperature chart via email. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination.
