In the bar, observed the dishwashing machine in use with 0 ppm of chlorine sanitizer after a cycle from 10 minutes ago and a new cycle. The sanitizer line was primed, a new cycle was run, and the machine tested at 50 ppm. Chlorine sanitizer must be kept at the concentration stated on the container (50-100 ppm). 2nd Repeat violation In the burger prep cooler closest to the grill, observed shredded lettuce, pico, guac with tomatoes, cooked onions, cooked mushrooms, cut cherry tomatoes, cut tomatoes, slaw, bleu cheese, and shredded cheese all between 45*F and 50*F. All foods had been in the unit since approximately 9am. Temperatures had been taken at 12:23pm showing that the foods were below 41*F at that time. Foods were moved to walk in cooler to cool.

All foods had been in their respective units less than 4 hours and were moved to the walk in cooler to rapidly cool.
