Inspector's notes

Observed deli meats with internal temperature between 43F - 55F in the deli counter case. The perosn in charge provided temperature check logs indicating the most recent temperature check was less than 2 hours ago and temperature recorded was between 34F -38F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Dispaly thermostat on the deli case showed a temperature of 34.5F. The person in charge discontinued used of the sections of the deli case not maintaining minimum internal ambient TCS cold holding temperature of 41F or less and placed a work order for repair. TCS food items in the sections with the doors in disrepair had internal temperatures between 43F -55F. The person in charge discontinued use of the sections of the deli case that could not be properly enclosed to maintain minimum internal cold holding ambient temperature.
