Observed shelled and pooled eggs being stored directly below raw chicken in the walk in refrigeration unit. Employee rearranged the food so that chicken was stored below pooled and shelled eggs. Shelled eggs were also placed above comminuted meats and pooled eggs. Raw animal foods shall be separated by type based on minimum cook temperatures by spacing or placing in separate containers to reduce risk of contamination. TCS foods found in food prep cooler at internal temperatures of 47*F - 56*F. Unit's digital readable thermometer reading 52*F at time of visit. TCS foods must be maintained at an internal temperature of 41*F or below. Per food employee, it was undetermined how long foods may have been out of temperature. TCS foods in unit were embargoed (see embargo sheet). -------------- Food employee sorting foods to discard at time of inspection. Do not use unit to house TCS foods until unit can keep foods at an internal temperature of 41*F or below. PIC contacted technician by phone for service on unit at time of inspection.
