Observed 100°F internal temperature of birria in two containers on prep table behind cookline. Per person in charge (PIC), birria was cooked at 2am day of inspection and then immediately set on the table to cool down prior to storage in walk-in cooler. Per PIC, no temperature checks were conducted while birria was being stored on prep table. Cooked TCS foods shall be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Birria improperly cooled was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 50°F internal temperature, per probe thermometer, of cooked chicken, ground beef, diced ham, and chili rellenos inside prep cooler next to cook line. Per person in charge (PIC), listed TCS foods were taken out of prep cooler for a food order and then placed back into prep cooler after 30 minutes of use. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods listed improperly cold held were relocated to functioning walk-in unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Other cooked TCS food items in same storage area of prep cooler were measured at or below 41°F, per probe thermometer. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PIC voluntarily discarded 71°F cooked chicken.
