Observed 130°F internal temperature of cooked chicken inside steam well, per probe thermometer. Per Person in Charge (PIC), chicken was prepared and cooked three hours prior to inspection. Per PIC, cooked chicken was not on time control for safety. Except during preparation, cooking, or cooling all TCS foods shall be maintained at 135°F or above. Cooked chicken was reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Person in charge (PIC) properly stored raw animal shrimp according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code and covered container with lid. Inspector's notes

Employee was cleaning equipment and utensils in three compartment sink in the back of the kitchen with a sanitizer concentration >400ppm. Sanitizer solution of quaternary ammonium per mfg should measure between 200-400ppm. PIC adjusted the dial on the sanitizer dispenser and adjusted concentration so it was between 200-400ppm. PIC adjusted concentration of quat to measure 200-400ppm. PIC remade buckets of sanitizer solution and sanitized the equipment again in correct sanitizer concentration. Ensure all food contact surfaces are sanitized with a concentration of quat indicated by the manufacture's guidelines. Corrective Action: Corrected at time of inspection.
