Observed high temperature dishwasher only reaching 123*F in the final rinse when measured with a min/max thermometer. All high temperature dishwashers must reach a final rinse temperature of 160*F to ensure proper sanitization of food contact surfaces. Three compartment sink will be used until dishwasher is able to reach at least 160*F. Corrective Action: Corrected at time of inspection.
