Inspector's notes

Observed prepackaged sandwiches, yogurt, rolled up meat and cheese snacks, and meat and prepackaged meat and cheese containers at variable temperatures between 45 and 52°F in the front grab 'n' go fridge. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Out of temp foods had been placed in the grab 'n' go fridge within the hour after being offloaded from transport truck. Foods were placed in the walk-in fridge to rapidly cool at time of inspection. Observed several plastic boxes and freestanding TCS foods in the reach in fridge unlabeled. Foods included were taquitos, shredded and sliced cheeses. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Food preparation dates were determined for each item and properly dated at time of inspection. TCS foods that were not able to be determined which date they were prepared on were discarded and listed on the embargo form. Corrective Action: Corrected at time of inspection. Construction Inspection for Variance Application EHV-2316This inspection was conducted with the store manager on duty.A PDF copy of this inspection report was emailed to Sheryl K. and Taisun Y. at the time of this inspection.This inspection was conducted for the variance application regarding the F'Real FRLB6 machine.The use of the F'Real, FRLB6 machine must be discontinued until the alternative cleaning method variance is approved.The following items must be completed prior to Final Variance Approval;1. An additional, certified, drinking water safe, RPZ backflow prevention device, like the one installed for the soda fountain carbonator, must be installed on the water line that feeds the F'Real FRLB6 blender machine. This machine must be isolated from all other machines that are currently using the same water supply line. The use of this machine must be discontinued until the RPZ backflow prevention device is installed. Information regarding the variance was provided to the manager in charge at the time of this inspection.2. The following items must be addressed with regards to the equipment variance application; 1. The facility performs the specified operations in accordance with the approved plans pursuant to §8-103.12(A). 2. Alternate cleaning and sanitization schedule is limited to the FRLB6 blender. 3. Logs must be maintained that verify that the f’REAL blender undergoes automatic cleaning and sanitization using the submitted and approved process once every 24hrs and a manually cleaning and sanitizing using the submitted and approved process once every 7 days. 4. The device will undergo descaling to remove hard water deposit buildup inside the blender as needed to ensure device is clean to sight and touch. 5. High Temperature sanitization will be verified weekly by heat sensitive indicators, which will be maintained with the weekly logs 6. These logs must be retained on premises for at least 180 days. 7. The facility provides records upon request to the Maricopa County Environmental Services Department (“Department”) or its representatives pursuant to §8-103.12(B).3. The alternative cleaning method Variance that was submitted for EHV-2316 is not complete and is not currently being followed. A complete and approved procedure was submitted for 4 Sons Food Store #603, FD-04743 and was approved on 01/08/2021.County legal action may result from this inspection.
