Manager stated the tofu and the bean sprouts had been delivered less than 2 hours before and were moved to another unit to re-cool. The remaining items had been in the walk-in one or more days, per manager, and were embargoed. Manager discarded.

Additionally, there is a heavy accumulation of green and black organic matter on the surface and around the fans of the condenser unit. Observed bean sprouts in a cold holding unit in the produce department with a temperature of 44*F-51*F. Discussed with person in charge (PIC) that bean sprouts must be store at 41*F of lower. The bags looked to be crowded and possibly not getting enough cold air circulating around the stock. Also discussed moving the bean sprouts to the lowest shelf where the temperature is coldest. PIC moved the beans sprouts to give more circulation at time of inspection. Corrective Action: Corrected at time of inspection.
