Corrective Action: Corrected at time of inspection. Cut watermelon stacked above the pan rim in the top of the front cold table at 46*F internally. Calamari prepared 1.5 hours before at 55-67*F internally in a chest freezer that may have not been set properly. Manager covered the bags of calamari in ice to rapidly cool.

Inspector's notes

Observed the concentration of sanitizer in the three-compartment sink was too high at time of inspection. Inspector's chlorine test strips flashed. Person in charge (PIC) also tested with their chlorine test strips and the strips also flashed. Concentration of chlorine was above 200ppm. Discussed proper chlorine sanitizer concentration levels with PIC to be 50-100 PPM (dependent on mfg). PIC added water to dilute the concentration at time of inspection. Corrective Action: Corrected at time of inspection.
