Manager stated they had recently been put out and returned them to the walk-in to re-cool, provided sprouts that were 41*F or under. Employee stated that they were delivered the previous day, but that they were left out for about an hour. Discussed with person in charge (PIC) that spouts need to be 41*F or lower and the container was moved to the walk-in cooler to cool faster. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Everyone that works there needs to know what is in the container they are spraying/using. PIC wrote the names on all containers at time of inspection. Corrective Action: Corrected at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Observed a spray bottle of pest control for flies on a shelf above a food prep area in the kitchen. Discussed with person in charge (PIC) that all pest control needs to be done by a certified pest control specialist and that pest control cannot be stored on the premises. PIC removed the bottle of pest control spray from the establishment at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.
