Inspector's notes

Observed raw, ground beef stored above whole muscle in the retail cold holding unit next to the meat department, and on two shelves in the walk-in cooler. Ground beef should be stored below whole muscle due to having a higher cooking temperature. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed Meat freezer door that would not latch completely closed. The door frame appeared to be damaged by heavy equipment. The freezer unit maintained its items frozen and had additionally sealing with plastic curtains inside the door. Please repair to prevent employee's accidentally leaving the door open and having a thaw event within the freezer. Spoke to person in charge (PIC) about fixing this.
