Inspector's notes

Observed knives stored in metal box hung on the wall. Person in Charge (PIC) stated they are cleaned but the box itself could not opened easily to be cleaned at a frequency that prevents contamination. Informed PIC about cleaning it more frequently or changing the knife storage box to a more easily cleaned alternatives. Equipment, Utensils, Linens and Single-Service and Single-Use Articles stored in a clean, dry location; where they are not exposed to splash, dust, or other contamination; and at least 15 cm (6 inches) above the floor. Clean equipment and utensils shall be stored in a self-draining position that allows air drying; and covered or inverted. Corrective Action: Correct prior to next routine inspection.
