Inspector's notes

Ribs in ribs sandwiches held at 90 degrees F in a hot holding unit for less than 45 minutes. The Manager was advised to reheat the sandwiches in the oven, and after being reheated to 165 degrees F, they were returned to the hot holding unit. The ambient temperature of the hot holding unit was also increased. Corrective Action: Corrected at time of inspection.
