Inspector's notes

Observed gap in door gasket large enough to see light from the outside at the back exit door. Per person in charge (PIC) the doors are maintained by the land lord and will be contacted to fix as soon as able. All outer openings shall be protected against the entry of insects and rodents by having tight-fitting doors. Corrective Action: Correct prior to next routine inspection.

Observed no test strips for chlorine mechanical ware washing machine within facility. PIC was able to obtain and bring back test strips to facility by end of inspection. Test strips are required for any sanitizers used with food contact surfaces including ware washing machines. Corrective Action: Corrected at time of inspection

Observed the drain lines from the mechanical ware washing machine below the flood rim of the floor sink creating an air break where an air gap is required. PIC stated that they will fix drain lines to create an air gap as soon as able. Advised PIC that drain lines connected to ware washing units must be at least 1 inch above water line in floor sink. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a reach in cooler with an ambient temperature of 49°F located front of house. The only TCS item observed was milk measured at an internal temperature of 55°F at time of inspection. PIC stated this was opened this morning an hour ago. All TCS items improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed to PIC to only use the fridge for non TCS items until the unit is able to stay 41°F or below. Corrective Action: Corrected at time of inspection.
