Cooked wings measured 72-85 degrees F in covered, stacked plastic containers in walk-in cooler and prep top cooler. Person in charge (PIC) said that they had been cooked about 1.5 hours prior. Items were unstacked and uncovered at time. Additionally, covered and stacked plastic containers of tomato sauce measured 65 degrees F in walk-in cooler. Items had been prepared about an hour prior and were uncovered at time. Please ensure all time/temperature controlled for safety food items are cooled in shallow, uncovered containers, inside active cooling equipment until they reach 41 degrees F to allow for maximum heat transfer within the cooling time constraints (135 to 70 degrees F in 2 hours or less and 70 to 41 degrees F in no more than a total of 6 hours for cooked foods - 4 hours total for items cooling from ambient temp).
