#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

In reach-in refrigerator near patient prep line, observed the following TCS items with temperatures ranging from 52°F-57°F: shredded parmesan cheese, shredded mozzarella, sliced Monterey jack, pesto, pasteurized shelled eggs, turkey sausage, French toast batter mix (with liquid eggs), and multiple egg cartons. The person in charge stated food safety temperature checks were last completed for all units around 5:00 AM this morning. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

-- The ambient temperature of reach-in refrigerator near patient line measured at 54.5°F using min/max thermometer. See violation above. At the time of inspection, all TCS items were discarded from the refrigerator. The PIC will place a work order to repair unit, and instructed food employees not to use equipment for cold holding TCS foods until repairs are completed. Non-TCS foods such as bread and tortillas can remain in unit while awaiting repairs. The establishment has sufficient refrigeration space to safely remain open. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below.
