Observed three chicken breasts in the hot holding unit above the make-line ranging from 125*F to 130*F using probe thermometer (verified by person in charge). Person in charge stated they were placed in the unit approximately 15 minutes prior to inspection and reheated the chicken to 165*F at the time of inspection. Inspector's notes
Observed raw chicken in cold holding unit temp 46-50*F. Unit located to the right of flat top grill, with chicken in bottom pull out draw. All other TCS foods held in unit were 41*F or below. PIC stated chicken had been put in unit 1hr prior to inspection with chef frequently opening unit. Recommended putting ice underneath chicken as well as long term solution of relocating frequently used raw chicken. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Ice was placed in food safe bag under raw chicken also in a bag inside metal container. PIC placed time stamp on raw chicken to ensure time/temp control. Corrective Action: Corrected at time of inspection.

The temperature of each wrapped rib was taken and the ribs that were in the range of 43*F to 47*F were discarded by the person in charge (3 lbs. of cooked ribs). The ribs that were in temperature went back in to the walk-in. Cooked ribs were located in the make unit refrigerator opposite of the grill and located in the bottom left drawer in a plastic container. Items were filled to the top of the container and were prepped on 1/16/24 and placed in the unit at approximately 10:30am from the walk-in. The temperature of the other food items in the same unit were 41*F or below. Discussed with person in charge to use a metal container instead of plastic and to not fill the container to the top to help keep the food at 41*F or below and except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. In second reach in unit next to chicken hot holding unit had ambient temperature of 46*F-49*F with min max.
