observed at the cookline, cut sliced tomatoes at 47 deg f, soft cheese, a pan of Blue cheese at 51 deg f , ranch, salsa dressings at 47-51 deg f . discussed the proper cold holding for the tcs food. Also some of the on site ranch and mayo dressings pans were overfilled temperatures at 50-54 deg f . (above trays in the grill station reach-in cooler). suggested to keep lesser amount smaller pans in the cookline reach-in top trays, and provide lids to ensure 41 deg f established. Manager spoke to cookline staff, removed food trays and replaced with 41 deg f replacement. Corrective Action: Corrected at time of inspection.
