Observed slicer with food debris between the blades on the equipment. Per PIC the equipment was used and cleaned yesterday. Inspector's notes

Observed cooked rice in portioned bags, cooked chicken, cooked grits and cooked brussel sprouts in the make table on the line with an internal temperature of 45-48'F. Observed only the bottom portion of the cooler out of temperature. Bottom cooler using the min/max thermometer was 48'F. PIC removed the items out of temperature and moved them to the walk-in cooler to rapidly cool. Items were placed in the cooler just prior to opening. Observed ranch and chipotle ranch dressings stored in a residential refrigerator with an internal temperature of 47'F. The ranch was also placed in the fridge just before opening and was moved to the walk-in cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed the following items without a date: cooked chicken, machaca rolls, cooked machaca meat, pot pies, and ribs. Per PIC most items were cooked Monday, Wednesday and yesterday. PIC provided the dates at the time of inspection. Discussed adding the dates to the containers and not the plastic wrap. Also provide the exact date the item was made or will be discarded instead of the day of the week. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). MCESD cooling guidance document was reviewed with staff. Noted also on site cooked chicken prepared today at noon stacked in the bottom shelf. suggested to utilize a shelf , near the fan blowers(currently being used for whole vegetables upon receiving ). suggested to place cooling portioned cooked chicken bags in a smaller shallow pans and place near the fans to ensure rapid cooling. manager relocated cooked chicken bags from today. 41 deg f established. please monitor cooling.
