Inspector's notes
Observed meat slicers with build up of meat / cheese on them. Asked manager how they keep track of when to clean it, said it usually is told from manager to manager, but didn't know how long those slicers have been in use. Talked to general manager about systems to use to keep items clean. Ensure that meat/cheese slicers are cleaned within every 4 hours. Employees cleaned equipment in place. Corrective Action: Corrected at time of inspection.
