Inspector's notes

Observed chorizo breakfast burritos wrapped in a deep container in the reach-in cooler at 50'F at the time of the inspection. Per person in charge burritos were made about an hour prior and they are made with hot holding eggs. Educated person in charge on proper cooling methods. Burritos were unwrapped, placed on a sheet tray in the walk-in cooler to rapidly cool. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

All food contact surfaces must be properly cleaned and sanitize to prevent any potential cross contamination of food products. The PIC cleaned the nozzles. Observed the iced coffee made with milk with a temperature of 54F. The PIC indicated that it was placed in the unit more than 4 hours prior to inspection. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed sanitizer buckets throughout the establishment with a quat concentration of 400+ ppm. All sanitizer buckets using quat should have a concentration between 150-400ppm in order to properly sanitize food contact surfaces. The PIC indicated that the sanitizer dispenser is not properly calibrated by the servicer. Educated employees to dilute product to reach the proper concentration. The PIC replaced all the buckets with the proper concentration. Correct By: Corrected At Time Of Inspection
