Observed 2 packages of raw bacon on the top shelf on the reach in cooler by the bathroom. Bacon was being stored above cheese, ketchup, and raw carrots. In the reach in cooler by the bathroom, observed packages of bacon at 48*F, bags of cheese at 48*F, chopped lettuce at 48*F, and sticks of butter at 47*F. All foods were purchased today from local retailers and placed in unit approximately 2 hours prior. Foods were moved to other coolers to cool. All cold holding time/temperature controlled for safety foods are required to be kept at 41*F or below. Unit was holding at 48*F on inspectors min/max thermometer. Observed the reach in cooler by the bathroom holding at 48*F on inspectors min/max thermometer. Cooler was used for shredded cheese, chopped lettuce, butter, and raw bacon. All pieces of equipment used for cold holding TCS foods are required to be kept at 41*F or below. Fan coils were completely frozen over. Manager removed cold holding TCS foods and will defrost the cooler. Correct By: Corrected At Time Of Inspection
