Observed raw, breaded chicken cutlets stored above thawing raw pork sausage in walk-in cooler. Person-in-charge (PIC) was unaware of storage mistake by employees and immediately swapped the order of the raw meats to meet proper storage order by cooking temperature with poultry stored under comminuted meats. Discussed working with employees to ensure proper storage order and separation to prevent cross-contamination with PIC. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Person-in-charge (PIC) advised that bucket was filled approximately 2 hours ago and was due for changing in a few minutes at shift change. PIC dumped wiping cloth bucket and refilled with chlorine sanitizer measuring at 100 ppm. Discussed changing sanitizer buckets more frequently with PIC to maintain approved concentration of 50-100 ppm for chlorine solutions. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
