Observed walk in unit with an internal temperature of 47F. Food in unit was found to be at 41F as the air coming out of refrigeration unit was found to come out at 47F after checking back into unit after 30minutes. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Must repair unit within 24 hours. Corrective Action: Correct prior to re-inspection in 24 hours.

Observed tubs of hard-boiled eggs, cooked black beans, shredded cheese, and cooked corn in a reach-in cooler in prep area at 50-60 F. Person in charge (PIC) stated that the items had been in the cooler for about two hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Provide dedicated water line at mop sink for chemical dispensers. Chemicals may not be directly attached to mop sink faucet.2. Provide mop sink faucet with AVB.3. Flash gap above walk-in and ceiling.4. Provide an ASSE 1013 reduced pressure backflow assembly for carbonated beverage system. Run drain cup drain to neares floor drain. Brace to maintain 1 inch air gap above finished floor.5. Paint northern wall with semi or high gloss paint.6. Provide metal cove base along walk-ins.7. Fill gaps in floor throughout.8. Fill around floor drains and grease trap lid.9. Provide clean out covers where missing.10. All drain lines must be rigid and maintain 1 inch air gap above finished floors.11. Reseal hood with heat resistant silver silicone.12. Reseal floor as discussed.13. Provide extra bright lights in all walk-ins.14. Seal all mop sink junctures (walls/floor).15. Seal all equipment at wall juncture.16. Fill all gaps, cracks and penetrations.Please continue with construction according to plans, stipulation letter, and inspections.
