Inspector's notes

Observed cream & jalapeno sauce, shredded cheese, and pico de gallo in tabletop cooler between 45 and 60 F. Person in charge (PIC) stated that items had been in the unit for about 4 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. New batches of TCS foods were covered and placed over ice to maintain temperature and were later observed at 41 F. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed raw shelled eggs (56'F) and cooked potatoes (55'F) in reach-in unit located by rice cooker. Ambient temperature of unit observed at 53.6'F. PIC could not provide when unit went out of temperature and items in question have been in storage for longer than 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC agreed to not use unit in question until it has been repaired. Establishment observed to have more than adequate cold holding capacities. Corrective Action: Corrected at time of inspection.
