At front cutting table, cutting boards deeply scored. Resurface, replace, or flip on to other side for a smooth and easily cleanable surface. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and SANITIZED, or discarded if they are not capable of being resurfaced. Cutting surfaces such as cutting boards and blocks that become scratched and scored may be difficult to clean and sanitize. As a result, pathogenic microorganisms transmissible through food may build up or accumulate. These microorganisms may be transferred to foods that are prepared on such surfaces. Observed a worker rinsing a knife in the three compartment sink and then proceed to hang it on the magnetic strip intended for clean knives. The worker indicated that he had just washed the knife. Ensure approved sanitizer contacts all food contact surfaces after washing and rinsing, and it is the final step before air drying. The knife was properly washed, rinsed and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

At the three compartment sink, observed a worker rinse a knife in the same center sink compartment where there was an open container of frozen shrimp. Warewashing should not be carried out at the same time the sink is being used for food preparation. Sinks used to wash or thaw FOOD shall be SANITIZED as specified under Part 4-7 before and after using the sink to wash produce or thaw FOOD. Installation of a designated food prep sink is recommended. Corrective Action: Correct prior to next routine inspection.
