Inspector's notes

Observed 0 PPM of quat sanitizer in sanitizing compartment. Establishment was washing dishes without filling sanitizer compartment to submerge all dishes. Water was drained and refilled at time of inspection. Sanitizer was tested at 200 PPM at time of inspection and filled high enough to submerge all dishes. Also discussed importance of proper sequence of storing clean and dirty dishes.

Observed 0 PPM of QUAT sanitizer in three compartment sink. PIC identified sanitizer bag was empty and replaced at time of inspection. Please test regularly to ensure sanitizer is maintained at proper levels at all times. Re-tested and was able to bring sanitizer to 200 ppm. Correct By: Corrected At Time Of Inspection
