Observed 4-hour time as a control being used for certain hot proteins in the deli such as chicken nuggets. According to manager and employees, certain proteins are cooled to be sold as cold proteins and some items are discarded after 4 hours. Chicken nugget labels contained the time that the item was placed in the hot case, but did not contain a discard time. Observed no written policy for food on time as a control available. Provided County guidance document in email. Please provide a written policy for items on 4-hour time as a control prior to re-inspection on 6/22/26.
