High temp mechanical warewashing machine measured 112 degrees F at surface of wares after multiple cycles while in use during inspection. Booster heater was reset and sanitizing temperatures returned. Please ensure final rinse cycle for high temp sanitizing in warewashing machines achieves a minimum of 160 degrees F at dish surface for effective sanitizing of wares. Inspector's notes
Observed a large number of containers of marinara sauce in walk-in cooler which measured 109-112 degrees F. Items had started cooling over an hour prior and were moved to an ice bath to cool more quickly at time. Please ensure food items are cooled in shallow, uncovered containers (or using external methods such as ice baths/wands) to achieve 70 degrees F from 135 degrees F in no more than 2 hours, and 41 degrees F in no more than an additional 4 hours. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the drain underneath the main dish machine is not draining, and overflowing into a nearby drain. A technician was called out on the 18th and per the invoice the drain is not functioning properly. An employee was able to plunge the drain so the wastewater was not present in the establishment. A technician will be at the establishment tonight to service the drain. In the meantime the establishment set up the 3 compartment sink to use. In person reinspection for the drain will be tomorrow, Friday, July 26th. Please ensure the area is fully sanitized. Corrective Action: Correct prior to re-inspection.
